What are cocoa nibs?
Cocoa nibs are roasted cacao beans broken into pieces after the shell is removed. They are crunchy, with a bitter, intense cacao flavor, and contain no sugar. They are the step before cocoa liquor: when nibs are ground, they become cocoa paste.
