Real chocolate couvertures
CPC's couvertures are real chocolate made with cocoa butter and 100% Colombian cacao, at 80%, 70%, 65% and 55% cacao, 45% milk chocolate and white chocolate, in 1,000 g packs. They deliver gloss, fluidity and a clean melt for pastry, confectionery and coating.

What is a real chocolate couverture?
A couverture is chocolate formulated to melt, coat and mold. Real chocolate couvertures use cocoa butter as their fat; compound coatings replace it with vegetable fats. Cocoa butter is what gives real chocolate its gloss, snap and melt in the mouth.

Which cacao percentage to choose
- 80%: the most intense and least sweet, for ganaches and desserts where cacao leads.
- 70%: a balance of intensity and sweetness; versatile for bonbons, mousses and molds.
- 65% and 55%: milder and sweeter, for coating fruit, cookies and mainstream pastry.
- Milk 45%: creamy, for bonbons, fillings and decoration.
- White: for decoration, fruit ganaches and color contrast.
How to work with couverture
For a glossy finish and a good snap, real chocolate is tempered before molding or coating. If the couverture is only melted into a batter, ganache or cream, it does not need tempering.
How CPC makes them
CPC makes its couvertures from cocoa liquor produced at its own plant in Chiquinquirá. The mix goes through the Conca 100 agitator (100 kg per batch) and the Legend tempering machine (90 kg/h), both Italian Selmi equipment. The same percentages are used in Golú chocolate bars.

CPC's couvertures are made for pastry shops, bakeries, chocolate makers, ice cream makers and baking businesses. CPC also produces couvertures under the customer's own brand as private label.
