What is cocoa liquor?

Cocoa liquor, also called cocoa mass or cocoa paste, is cacao beans that have been roasted, winnowed and ground into a paste. Despite the name, it contains no alcohol. It is the base of all chocolate: it holds both the cocoa solids and the cocoa butter of the bean, so it is solid at room temperature and melts when heated.

Because it contains no sugar or other ingredients, cocoa liquor lets manufacturers control the cacao percentage, sweetness and texture of their final product.

Unrefined or refined: which one to choose

Unrefined cocoa liquor keeps the texture of the grind and an intense character. It works when the final product goes through its own refining step, or when texture is not critical, such as in baked fillings, ice cream bases or beverages.

Refined cocoa liquor goes through CPC's Micron 25 ball refiner down to a 120–180 micron particle size: a finer, more uniform texture that blends better into mixes, creams and fillings. If your product needs a different fineness, discuss it with CPC before requesting a sample.

How CPC makes it

CPC processes the beans at its Chiquinquirá plant with Italian Selmi machinery: a Roaster 120 (20 kg per batch), a Winnower (50 kg/h), a Grinder Plus mill (35 kg/h) and a Micron 25 refiner (25 kg per batch). The liquor is packed in 25 kg boxes.

Does cocoa liquor contain alcohol?

No. Cocoa liquor is ground cacao paste; the name comes from the liquid state it takes when melted, not from alcohol in the product.

What is the difference between cocoa liquor and cocoa powder?

Cocoa liquor keeps all the cocoa butter of the bean. Cocoa powder is made by pressing cocoa liquor and removing most of that butter, so it is dry and lower in fat.
